Gluten Free Strawberry Shortcake

Ingredients:

  • One Dessert Biscuit (see below)
  • 1/2 cup fresh strawberrie
  • 1/4 tsp sugar or sugar replacement
  • 2 heaping tbsp Cool Whip

Split biscuit, top with strawberries, sugar and topping.

Dessert Biscuits

Preheat oven to 450° Lightly grease cookie
sheet
Stir together dry ingredients.
Cut 1/4 cup margarine or butter into pancake
mix until shortening is pea sized
Slowly add milk, stirring with a fork, until
mixture is evenly moist.
Using an ice cream scoop, drop dough onto
cookie sheet.
Bake until light brown...about 8 minutes.
Makes 6
