Gluten Free Old Fashioned Cupcakes 
 
INGREDIENTS:
  • 1 3/4 cups Gluten Free Pancake Mix
  • 3/4 cup butter
  • 3 ounces cream cheese
  • 1/2 teaspoon salt
  • 1 1/2 cup light brown sugar
  • 3/4 cup applesauce
  • 1 teaspoon baking powder
  • 4  eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon or almond extract
DIRECTIONS:
Preheat oven to 350F. Grease cupcake pans and set aside. Best together cream cheese and butter until light and fluffy. Add salt, brown sugar, flour and baking powder, mix well. Add extracts, applesauce and one egg. Add remaining eggs, one at a time and beat until fluffy.

Spoon batter into cupcake pans, filling 2/3 full and bake until a toothpick inserted into the center comes out clean, about 25-30 minutes.

Let cupcakes sit in pan for 5 minutes and then invert onto wire rack to cool.
