Maple Grove Farms Blueberry Spread Filled Crepes 
 
INGREDIENTS:
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1 tablespoon grated lemon or orange peel (optional)
  • 1 tablespoon sugar
  • 2 tablespoons butter, melted
  • 2 tablespoons Maple Grove Farms Blueberry Syrup
DIRECTIONS:
Whisk all ingredients except butter (or put in blender) until smooth. Add melted butter and whisk again until smooth and foamy. Pour into clean glass container and cover with plastic wrap. Let sit at room temperature for at least 30 minutes.

Add 2 tablespoons of batter into buttered non-stick pan. Cook crepe until brown on bottom, about one minute. Turn crepe and cook another 30 seconds. Place crepe onto plate. Fill with 2 teaspoons Maple Grove Farms Blueberry Spread, then roll. Bake in a 350F oven for 5 to 7 minutes. Garnish with mint leaf, orange rind or fresh blueberries.
