Maple Nut Cake 
 
INGREDIENTS:
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoons ground cinnamon
  • 3/4 cup chopped, toasted pecans
  • 1 tablespoon finely chopped crystallized ginger
  • 2 eggs, lightly beaten
  • 1 cup buttermilk
  • 1/4 cup butter, melted
  • 1/2 cup Medium Amber Pure Maple Syrup
DIRECTIONS:
In a large mixing bowl, stir together the flour, baking powder, baking soda, cinnamon, pecans and ginger; set aside.

Stir together eggs, syrup, buttermilk and butter. Stir into the flour mixture until combined.

Pour into an ungreased 9 x 11 inch round baking pan. Bake in a 350F oven for 35 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 30 minutes.

If desired, sprinkle with sifted powdered sugar and serve cake warm with ice cream or whipped cream.
